Crab Tomatillo Linguini


  • Oil as needed
  • Garlic (minced) 1 Tablespoon
  • Shallots (minced) 1 Tablespoon
  • Corn (frozen) 2 ounces
  • Bell Peppers (diced) 1 ounce
  • Tomatillo (diced) 2 ounces
  • V-8 6 fluid ounces
  • Chili Paste 1 Tablespoon
  • Linguini (cooked) 8 ounces
  • Jumbo Lump Crab 4 ounces
  • Cilantro (chopped) 1 Tablespoon
  • Scallion ( chopped) 1 Tablespoon


Heat oil in a saute pan and sweat garlic and shallots. Add to this pan frozen corn, bell peppers, and tomatillos. After these ingredients have cooked through add V-8 juice and chili paste and bring to a boil to create the sauce. Toss in the cooked linguini and heat the pasta through. Lastly add in the crab meat, cilantro, and scallions at the end; cooking just enough to warm up. Plate and enjoy.
